Amazing Holiday Apple Cake

Mix with electric mixer:
1 tsp. baking soda
1 tsp. cinnamon
tsp. salt
3 eggs
1 cups sugar
1 cup cooking oil

Mix by hand and add to above mixture:
2 cups flour
1 cup chopped nuts
Peel, core and slice (as for a pie) 5 big apples.

Carefully fold apple slices into mix. Pour into greased 9x13 baking pan. Bake for 1 hour at 350. DO NOT PREHEAT OVEN Cool for at least hour and serve with vanilla ice cream.

Cranberry Bread

2 c. flour
1 1/2 tsp. baking powder
1 c. sugar
Orange Juice and hot water to make 3/4 c.
1/2 tsp. salt

1/2 tsp. baking soda
2 Tbsp. shortening
1 c. walnut meats
1 egg
1 c. raw cranberries, cut in halves

Cream shorting with sugar; add egg. Add dry ingredients. Alternate with orange mixture. Add cranberries and nuts. Mix well. Bake in 350 degrees oven for about 50 minutes.

Inside Out Cake

1 box of chocolate cake mix
1 instant chocolate pudding
1 (12oz.) chocolate chips (1/2 bag)
2 eggs
1 3/4 C. Milk

Combine the chocolate cake mix,chocolate pudding, eggs, and milk into bowl. Beat for 2 minutes on high, then add chocolate chips. Pour into a greased and floured bundt pan.Bake at 350 degrees for 50 to 60 minutes.

Pumpkin Bread (Microwave)

Graham cracker crumbs
1 cups flour
1 cup sugar
cup coarsely chopped nuts
cup raisins, if desired
1/3 cup vegetable oil
1 tsp baking soda
tsp salt
tsp ground cinnamon
tsp ground cloves
tsp baking powder
2 eggs
can pumpkin (16 oz.)

Generously grease 10 cup microwavable ring dish; coat with crumbs. Beat remaining ingredients in large bowl on low speed for 30 seconds, scraping bowl constantly. Beat on medium speed for 45 seconds, scraping bowl frequently. Pour into dish.
     Cover with waxed paper and microwave on inverted microwavable dinner plate on medium-high (70%) for 5 minutes; rotate dish turn. Microwave until top of bread is almost dry and springs back when touched lightly, 5 to 7 minutes. Let stand on flat, heatproof surface 10 minutes. Cool completely before serving.

Pumpkin Cake

1 pkg. yellow cake mix
cup melted margarine
1 egg
Set aside 1 cup dry cake mix. Mix the rest of the cake mix with above ingredients. Pour into greased 13" x 9" baking pan.

3 cups canned pumpkin
2/3 cup milk
2 eggs
Mix above ingredients well. Pour on top of cake mixture.

1 cup reserved dry cake mix
cup sugar
cup margarine (room temperature)
1 tsp. Cinnamon
Mix above ingredients with a fork. Sprinkle on top of cake.

Bake at 350 for 50 to 60 minutes. Cool for at least 15 minutes. Serve with vanilla ice cream, if desired.
