Christmas Cookies

Best Pumpkin Cookies Recipe
Yield:3-4 dozen

2 c. Butter, softened (4 sticks)
2 c. Sugar
2 Eggs
2 c. Mashed cooked pumpkin (or - canned)
2 ts. Vanilla
5 c. All - purpose flour
2 ts. Baking powder
1 ts. Baking soda
4 ts. Ground cinnamon
2ts. Ground cloves
2 ts. Ground nutmeg
1 ts. Salt
2 c. Raisins
2 c. Pecans (Chopped)
2 c. Chopped walnuts

Preheat oven to 375 F. Cream together the butter and sugar until smooth. Beat in the eggs one at a time. Add the pumpkin and vanilla, blending well. In a separate bowl, combine ,the flour, baking powder, baking soda, cinnamon, cloves, nutmeg, and salt. Add to the creamed mixture, stirring well. Mix in the raisins and nuts. Drop by spoonfuls onto greased cookie sheets and bake in a preheated 375 F oven for 10 to 15 minutes.

Coconut Joys

cup butter
2 cups powdered sugar
3 cups coconut
2 squares unsweetened or semi-sweetened chocolate (melted)

Melt butter in pan. Remove from heat, add powered sugar & coconut. Mix well. Shape into ball and make indent in center. Place on cookie sheet. Fill center with melted chocolate. Chill until firm store in refrigerator {makes 3 dozen}

Colorful Coconut Balls

1 pack of jello
1 can of fussels cream
1 cup of fine coconut


Mix all together and rool into balls. Refrigerate for 1 hour.

Holiday Crunch Bars

cup butter, melted
1 cup graham cracker crumbs, finely crushed.
1 pkg. chocolate chips (8 ounces)
1 pkg. butterscotch chips (8 ounces)
1 pkg. flaked coconut
1 can sweetened condensed milk

Layer ingredients in order listed in a 9x12 baking pan. Bake 25 minutes at 350 or until batter bubbles and begins to turn carmel color. Cool; cut into small squares and serve.

Holiday Date Nut Bars

8 oz. pitted dates, chopped
1 cup chopped raisins
1 cup chopped walnuts
1 tsp. grated orange peel
1 tsp. cinnamon
1 cup sugar
lb. butter or margarine, room temperature
1 tsp. vanilla extract
2 eggs
2 cups flour
2 tsp. baking powder
tsp. salt
1 Tbsp. orange juice

Preheat oven to 375. Grease 2 baking sheets, set aside.
     In a large bowl stir dates, raisins, walnuts, orange peel, cinnamon, and cup sugar until fruit is coated with sugar, set aside.
     In a separate bowl cream butter or margarine, the remaining cup sugar and vanilla until light and fluffy. Beat in eggs one at a time, mixing well after each addition.
     Stir in flour, baking powder, salt and orange juice. Add date mixture. Stir until blended. Do not over mix. Dough will be stiff. Divide into 4 portions and make into 4 logs about 12x2.
     Place on 2 on each baking sheet. Bake 15 minutes. Although they will be slightly brown, logs will feel very soft and underdone. They will become firm as they cool. Cool 15 minutes. Cut diagonally into inch logs. Dust with powdered sugar. Makes about 64 bars.

My Busias sugar cookies

4 cups sifted all-purpose flour 1 cup soft butter
1 tsp. salt 1 cups sugar
1 tsp. baking soda 2 eggs
tsp. cinnamon 2 tsp. almond extract
1 tsp. baking powder 1 cup (1/2 pt.) dairy sour cream

In a small bowl sift together flour, salt, baking soda, baking powder, and cinnamon. In a large bowl cream butter until light and fluffy. Add sugar gradually, beating well. Add eggs, one at a time, beating well after each addition. Stir in almond. Add dry ingredients to creamed mixture alternately with sour cream. Mix until smooth. Cover with waxed paper. Chill in fridge until firm enough to roll. Roll 1/3 dough at a time. Roll thick on lightly floured board. Use cookie cutters. Arrange on ungreased cookie sheet. Bake in moderate oven at 375 degrees 10 to 12 minutes or until done and lightly brown.

TREE COOKIES

3 Eggs
1 c. of Flour
c. of Sugar
1 tsp of salt
c. of margarine
1/3 c. of milk

Mix ingredients together til batter is magazine thin. Then take a spoon and lay out batter. Take a tree cookie cutter and cut batter into a tree shape (unbaked) cookie. Then put pan in the oven to 320 for 3 to 9 min or bake to a orange gold. ENJOY YOUR COOKIES!!!!!!!!!!

XTRA Rich Chocolate Brownies

1 store-bought brownie mix
3 TBS Water
C Vegetable Oil
2 eggs (3 eggs if you like cakelike brownies)

1. Preheat oven (check temp below)
2. Grease pan with cooking spray
3. Stir mix, water, oil & eggs til well blended.
4. Spread in pan.
5. Bake til toothpick inserted 2 inches from side of pan comes out clean or almost clean. (check minutes for pan size below)
6. Serve slightly warm, or cool completely. Store tightly covered.

13" by 9" pan at 350 for 26-28 min
9" by 9" pan at 350 for 35-40 min
11" by 7" pan at 325 for 40-45 min
  8" by 8" pan at 325 for 50-55 min

(Mrs. Claus Tip: With brownies it is best to err on the side of underdone rather than overdone)
